Marco Longhi is a very experienced and talented Italian specialty Chef, who has worked in Italy, Australia, USA and England. He took up cooking by watching his mother at home, and learning the recipes and ingredients used by her.

His last assignment was in Bahrain in a 5* hotel as Italian Head Chef, preceded by a similar position in Dubai for another 5* Hotel & Golf Resort.

In January 2015, Madison Mayfair successfully placed Marco as Italian Head Chef with one the World’s major hotel brands based in the Middle East .

What inspired you to become a Chef?
My mother inspired me in my job because from the time I was child I was watching my mother cooking, and some time I take some recipe from her because she is a very good cook.

What was your very first job?
My first job was in a restaurant to wash plates, I was 15 years old

What three words best describe your cooking style?
Passion, love and simplicity

What is so special about Italian cuisine?
Italian cuisine is special because we use good products, we make it easy and taste good and healthy

If you could only cook with 3 ingredients for the rest of your life which would they be and why?
Tomato, olive oil and basil because is the base of Italian cooking

Which Italian Chef inspires you the most?
Sergio Mei – Executive Chef of the Four Season in Milan and Claudio Sadler a very good and creative chef

What would be your last meal and who would cook it?
A nice risotto – Milanese, typical dish from my city

If you had not been a chef, what would you have done?
No idea – perhaps a football player!

What’s your favourite kitchen utensil?

Favourite junk food?
Hot Dog

If you had more free time, what you would do?
Swimming and going to the gym

What was your proudest moment?
When I was in Abu Dhabi, I cooked for the Italian Minister of Defence. He was very happy and he shook my hand and told me everything was excellent!!

Fettuccine Mare e Monti
